Market Overview - The global isomaltulose market reached $16.2 million in 2023 and is expected to grow to $48.9 million by 2030, with a compound annual growth rate (CAGR) of 17.19% from 2024 to 2030 [2]. Production Technology - The enzymatic preparation of isomaltulose has high conversion rates and meets green environmental requirements. Sucrose isomerase (SI) is an effective enzyme for catalyzing isomaltulose production. Immobilizing SI can improve its stability, reduce inactivation, and enhance recyclability in industrial applications [3]. Research and Development - Professor Liu Fufeng's team at Tianjin University of Science and Technology developed a directed immobilized enzyme that significantly improves heat resistance and reusability while maintaining high activity after multiple cycles. This work lays a solid foundation for the green manufacturing of isomaltulose and provides innovative ideas for the development of new directed immobilized enzyme technologies [4]. Conference Information - The SynBioCon 2025 conference will be held from August 20-22 in Ningbo, Zhejiang, focusing on AI and biological manufacturing, as well as four application areas: green chemicals and new materials, future food, future agriculture, and beauty raw materials. The "Youth Forum on Biological Manufacturing" will highlight scientific issues, solutions, results, scalability, and future directions in the research field [8][11].
