科技日报记者 张蕴 阿尼玛卿雪山,巍峨肃穆。山脚下,青海省果洛州玛沁县农畜产品加工冷链物流产业园内,却是一 片火热的生产景象。日前,青海原牛香食品有限公司(以下简称"原牛香食品")的全自动化牦牛肉丸生 产线正式启动规模化生产。这标志着青藏高原规模最大的牦牛肉丸加工基地正式建成投产,助力青海牦 牛产业实现从"原始放养"到"绿色有机"、从"原料输出"向"品牌输出"的高质量转型。 产出"高原红珍珠" 在这座现代化工厂恒温恒湿十万级洁净车间内,机械运转声奏响了产业升级的序曲。 在全长约300米的全自动化牦牛肉丸生产线上,一块块经过严格检疫的新鲜有机牦牛肉,依次完成 去骨、去油、剔筋膜等精细处理流程后,在精准温控下,再经过打浆、定型、熟化和风冷等自动化流 程,变身为一颗颗牦牛肉丸。它们在输送带上"列队"行进,犹如跳动的"高原红珍珠"。"你看,从牦牛 屠宰到成品牦牛肉丸生产,整个过程不超过4小时。我们还专门建设了屠宰厂和分割生产线,让牦牛肉 丸达到最佳口感。"原牛香食品生产总监杨艺勇指着飞速运转的设备向记者介绍,"我们通过速冻螺旋急 速锁鲜技术,能够在25分钟内将牦牛肉丸中心温度迅速降至零下18摄氏度,最大程度锁住牦牛肉 ...
