4月27日,由山东建筑大学与古贝春集团有限公司联合开展的"清代窖池窖泥理化特征与定年研究"项目通过权威专家鉴定,首次以科学手段证实:古贝春 集团老城酒厂(古贝春酒厂旧址)窖池已溯至清代康熙年间。这一突破性成果不仅破解了白酒行业老窖池断代难题,更以精准数据为古贝春品牌的历史底 蕴与品质升级提供了科学背书。 有效提高窖泥年代测试精度 窖泥是白酒酿造的"微生物宝库",其年代直接决定酒体风味与陈酿价值。尽管古贝春窖池历来有"清代遗存"之说,但因窖泥碳源复杂(混合酿酒原料、微 生物代谢物及环境碳),传统碳14测年技术误差高达数百年,难以精准溯源。 项目团队创新研发"多参数筛选+碳同位素修正"技术体系,通过含水率、有机质含量、硅铝比等12项理化指标层层筛选,结合高粱(C4植物)等特有的 δ¹³C同位素指纹溯源,成功将测年误差从数百年缩小至50年以内,最终锁定窖池建造年代为1684——1733年间,与相关物证资料记载高度吻合。 三大研究成果圆满结题 鉴定会由山东省食品科学技术学会组织,三位泰山学者在内的五位跨学科专家组成的评价专家委员会认真听取了项目组的工作报告,详细审查了相关研究 资料。对该项目主要研究内容、创新点、研究 ...
